Wedding Meal Choices and Meal Plan

First, the meal plan for the week. We have spent a lot of time coordinating meals for the week with Nair, the delightful head chef for the Raasay House. We opted to go with themed meals each night to give variety rather than using their set menu, which would give the same two options all week. We have also decided to go family style, so people can have more of what they like. As a result, we've changed the pricing structure. The Raasay House has given us a discounted rate of £455 per person for the entire week. This will include your breakfasts, lunches and 3- to 4- course dinners each night, and of course we will cover your room and the wedding day meals, so it's quite budget friendly. Drinks will be charged separately as there will be quiet a range in what folks are doing on that front.
Since we are going this route, it is quite important to give the kitchen reasonably accurate numbers on each meal, including alternate meals. I will be creating a separate page by the end of the weekend with all of the choices and an RSVP for each day. If neither of the meal choices on the day appeal, you will have the option to request an alternate meal through the RSVP. Again, very important to RSVP on the meals please.
First up, the wedding meal.
Appetizer choices:
Butter seared hand dived Sconser scallops, lemongrass & coriander cream, spiced oat crumb & lime
Baked camembert with walnut pesto
In between course:
Isle of Cumbrae oysters, smoked dulse & lemon
Baked Oyster
Main (plated with sides shared by the table):
Pan roasted hake (fish) with Isle of Lewis mussels, venison chorizo & samphire
Grilled chicken supreme, celeriac & baby carrot cream
Dessert:
Oatmilk & vanilla carrageen pannacotta, heather honeycomb, berries & almonds
White chocolate & Raasay whisky semifreddo, pecan praline, warm poached plums
There will also be warm bread, butter and olives on the table to start and as sides there will be chili & garlic sauteed brassicas, Raasay fennel, orange & almonds, roasted baby potatoes, sour cream & herbs.
